Drying cocoa beans

Choose Chius is the first tree-to-bar chocolate maker in Taiwan. All cocoa beans are sun-dried after fermentation in order to reduce the moisture content to about 7.5% - 6.8 %. Drying must be carried out carefully to ensure that off-flavours are not developed.
